Aged on American oak chips
We present the apple vinegar ,,Assort’’. The product is made at the basis of the Esco-S Green Engineerng Demonstration Enterprise , https://www.facebook.com/escosbazaleti, With almost zero impact on the environment.
The first-hand raw material for the product consists of different apple-type fruit juice, obtained through organic means in the municipality of Gori, Georgia. Harvest of 2020. The fruits were collected from local inhabitants’ chemical-free household areas and gardens. To reach the desired level of glucose content in the juice, obtained through cold mechanical pressing, the juice has been amended according to the famous Italian methodology called “Modena’’.
Aging and fermentation of the vinegar have been undergone during 2020-2021, by infusing American oak chips and garden basil cultivated in accordance with organic rules, (Ocimum basilicum), in a high-mountainous village of the Caucasus –Chanadirtkari . The content of the acetic acid in ,,Assort’’ vinegar is 6%.
